Goan Baath Cake (Semolina Coconut Cake)
Ingredients:
- 1 cup semolina (rava)
- 1/2 cup grated coconut
- 3/4 cup sugar
- 1/2 cup milk
- 1/4 cup ghee or unsalted butter, melted
- 1 teaspoon baking powder
- 1/2 teaspoon cardamom powder
- A pinch of salt
- 1/4 cup chopped nuts (optional)
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a mixing bowl, combine semolina, sugar, grated coconut, baking powder, cardamom powder, and salt.
- Add the melted ghee and milk to the dry ingredients. Mix well until combined.
- If using, fold in the chopped nuts.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 25-30 minutes or until the cake is golden brown and a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
