Bebinca (Goan Layered Cake)
Ingredients:
- 2 cups coconut milk
- 1 cup all-purpose flour
- 1 cup sugar
- 1/2 cup ghee (clarified butter) or unsalted butter, melted
- 1/2 teaspoon baking powder
- 1/2 teaspoon cardamom powder
- A pinch of salt
Instructions:
- Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.
- In a mixing bowl, combine coconut milk, sugar, and half the melted ghee. Mix until well combined.
- In another bowl, whisk together the all-purpose flour, baking powder, cardamom powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until smooth.
- Pour a thin layer of the batter into the prepared cake pan, just enough to cover the bottom. Bake for 10-15 minutes until set and lightly golden.
- Remove from the oven and brush with ghee. Pour another layer of batter on top of the first layer. Bake again until set.
- Repeat this process, adding layers and baking until all the batter is used (about 7-8 layers total).
- Allow the Bebinca to cool completely before slicing. Serve at room temperature.

- Sliced Mango: Arrange thin slices of fresh mango on top for a pop of color.
